Meatloaf is one of those meals that takes me back to my childhood. We ate meatloaf quite often in my childhood home, and I have continued making it in my adulthood for my own family.
You’ll Need:
Meatloaf Ingredients:- 1.5 pounds ground beef
- ¾ cup gluten free oatmeal quick or old fashioned
- ¾ cup milk
- 1 egg
- ½ cup finely diced onion
- 1 ¼ teaspoon sea salt
- ¼ teaspoon black pepper
Topping Ingredients:
- 2/3 cup ketchup
- ¼ cup brown sugar
- 2 tablespoons mustard
Equipment:
- Loaf pan
- Mixing bowl
Instructions:
- Preheat your oven to 350 degrees F.
- Combine all meatloaf ingredients (excluding topping ingredients) into a medium bowl. Use your clean hands to mix the ingredients just until they're all incorporated. Over-mixing may result in a tougher meatloaf so don't overmix.
- Transfer the meat loaf mixture to a loaf pan, and press and smooth the surface until it’s even.
- Next, mix the topping ingredients in a small bowl. Pour the topping over the meatloaf in the loaf pan, then use a silicone spatula to spread it evenly over the surface of the meatloaf.
- Transfer the loaf pan to the oven, and bake for 1 hour and 20 minutes.
- Remove your gluten free meatloaf from the oven and drain off any excess grease. You may need to spread the topping once more after draining, so it evenly covers the surface.
- Allow the meatloaf to cool for up to 10 minutes before serving with your favorite side dishes.
