Greatest Vegan Peanut Butter Banana Brownies #veganbrownies #vegandessert

A delicious made from scratch vegan ooey-gooey brownie that is loaded with peanut butter, chocolate, and bananas!

To make it look like rotting bananas on my counter is intentional, I turn them into things like these delicious Vegan Peanut Butter Banana Brownies! These are so easy to make my 6 year-old son can whip up a batch in just a few minutes! I confirm correct measurements and put them in the oven, but other than that he sees them through from start to finish.

Ingredients:

  • 2 Over Ripe Bananas
  • 1 cup Sugar
  • 1/2 cup Vegan Butter, Melted
  • 1 tsp Vanilla Extract
  • 3/4 cup Flour
  • 1/8 tsp Salt
  • 1/4 cup Cocoa Powder
  • 1/2 cup Creamy Peanut Butter

Instructions:

  1. Preheat oven to 350 degrees.
  2. In a bowl, use a fork to mash the bananas. Add the sugar, 1/2 cup of melted butter, and vanilla. Whisk until combined.
  3. Add the flour, salt, and cocoa powder. Whisk until well combined.
  4. Pour batter into greased 9 x 9 pan.
  5. Use a spoon to add dollops (about 1/2 cup) of peanut butter on top of the batter. Using a butter knife, swirl the peanut butter into the brownie batter.
  6. Optional: I like to drizzle additional melted peanut butter on the top of the brownies before baking. Then lightly swirl into the top of the batter. It gives them a nice thin layer of peanut butter, like pictured!
  7. Bake for 25-30 minutes, or until the center no longer jiggles when you shake the pan.
  8. Allow bars to cool completely before cutting.
